Hey, you. Clyde here.

I’ve been working way too hard this week. And you know how I love to cook. So tonight I felt like slaving over a hot stove for hours.

Not!

Sometimes I like to just make something fast, really fast, and easy. Because as much as I love to cook, after a long day at work (or a long week!) I just want to make something fast. But not soup from a can. (Blech.) So tonight, I threw together one of my simple standbys. It’s a really simple American Chop Suey that you can make in less than a half-hour.

What you need:

1 pound elbow macaroni
1 pound ground beef
1 jar chunky-vegetable spaghetti sauce
Worcestershire sauce

Here’s what to do:

Put a large pot of cold water on to boil. When it boils add a little salt and dump the macaroni in. (Make sure you stir it so it doesn’t stick.) Let the macaroni boil for 9-10 minutes, or as long as it says to on the package.

While that’s going, brown the ground beef in a large skillet. Then add the spaghetti sauce. Use your favorite Garden Vegetable sauce, or whatever. (Just make sure it has chunks of tomatoes etc.) Tonight, I used a jar of Classico-brand Sweet Pepper spaghetti sauce, and threw in a couple diced green peppers I had sweated. Stir the spaghetti sauce and meat together, and add Worcestershire sauce to taste. At this point, I usually simmer to reduce and thicken the sauce a little.

After the macaroni is done, drain it thoroughly. Then dump it back in the pot and mix in the sauce.

That’s it! Enjoy!

Clydene

P.S. This serves 4-6 people, or 2 people for 2-3 days.

P.P.S. Feel free to use more macaroni if you want to. I like the sauce more than the macaroni.
